Plantoils: from plant to nutrition

Abstract

Vegetable oils play a critical role in human nutrition and serve as a versatile resource for producing various food, pharmaceutical, and technical products. However, the fatty acid composition (FAC) of these oils may not always meet specific requirements for rational nutrition and various industrial applications. To address this issue, genetic improvement of oilseeds is considered the most effective approach, leveraging the natural genetic diversity present in these plants.
